Has anybody developed a model structure on globular sets which is Quillen equivalent to the classical model structure on simplicial sets?
I'm far from an expert, but it looks like the answer is "no". See here.
It seems like, even ignoring the (co)fibrations, there's no known choice of weak equivalences so that localizing gives spaces.
