I am looking for references on the coherence theorems for monoidal categories, symmetric monoidal categories, and so on.
What are good ones, containing the proof, besides the classic "Categories for the working mathematician"?
Johnson and Yau's free book 2-Dimensional Categories has a good modern proof of the coherence theorem for bicategories, which includes the theorem for monoidal categories as a special case. Their proof uses the bicategorical Yoneda lemma, which I find 'cleaner' than the original nuts-and-bolts proof by Mac Lane. However, the nuts-and-bolts proof is still very much worth understanding.
